Cooking with Foxy - The Toothless Chef - Roasted Cajun Style Cauliflower with Quinoa, Bean and Corn Salad

Feeling like something not only spicy but flavorful... this is it! I put that air fryer to use again and roasted some well-seasoned cauliflower.
 
*Please excuse Foxy for looking angry and miserable, he missed his nap time*
 
Prep Time: 10 minutes
Cook Time: 15 minutes
Serving Size: 4 servings
 
Ingredients:
 
For The Cauliflower - 
 
1 cauliflower bunch
1 tablespoon of Kingsford Cajun Style Spicy Louisiana Classic seasoning
2 tablespoons scallions to top
 
For The Quinoa, Bean and Corn Salad - 
 
1 cup quinoa
1 cup beans (of your choice-black, chickpea, pinto, red)
1 cup corn
1/2 chopped red onion
1/2 cup shredded carrots
2 tablespoons apple cider vinegar
5 minced radishes 
2 tablespoons scallions to top
 
Instructions:
For The Cauliflower- 
 
1. Chop cauliflower into florets.
2. Mix into bowl with cajun seasoning.
3. Place in air fryer for 15 minutes.
 
For The Quinoa, Bean and Corn Salad - 
 
1. Mix all ingredients into a bowl.
2. Serve together and enjoy!

    The recipe was easy to follow and I had all of the ingredients in the house so dinner was made within 20 minutes, quick healthy and delicious thank you Foxy keep those recipes coming
