Cooking with Foxy - The Toothless Chef - Portobello Steaks with Avocado Chimichurri

Good afternoon everyone!
Welcome to Cooking with Foxy, today we made something interesting. Not your traditional steak but still absolutely delicious, nutritious, good for the planet and all that call it home. 
Prep Time: 15 minutes
Cook Time: 10 minutes
Serving Size: 4
For the mushrooms -
3-4 large portobello mushrooms (remove stems and wipe clean)
1/3 cup balsamic vinegar
1/4 cup olive oil
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/4 teaspoon smoked paprika
3 cloves garlic (minced)
1 tablespoon steak sauce (optional)
    For the chimichurri -
    1 1/2 cups of parsley (finely chopped)
    3 cloves garlic (minced)
    1 medium shallot (minced)
    1/4 teaspoon red pepper flake
    3-4 tablespoons olive oil (extra virgin if possible)
    3 tablespoons lemon juice
    1/2 teaspoon sea salt
    1/2 teaspoon black pepper
    1 small ripe avocado (cubed)
      1. Add portobello mushrooms to a shallow baking dish or freezer bag and set aside.
      2. In a small mixing bowl, whisk together balsamic vinegar, olive oil, cumin, black pepper, smoked paprika, garlic and steak sauce. 
      3. Add sauce to the mushrooms and use a pastry brush to spread on all sides. Marinate on one side for 5 minutes, then the other side for 5 minutes.
      4. In the meantime, prepare chimichurri by adding parsley, garlic, shallot, red pepper flakes, olive oil, lemon juice, salt and pepper to a medium mixing bowl and whisk to combine. Adjust to your taste- more lemon juice for acidity, salt for flavor or red pepper flake for spiciness and heat. Add the cubed avocado and set aside.
      5. Heat the grill or large skillet over medium heat. Cook on each side for 2-3 minutes or until caramelized and deep golden brown. Brush any remaining marinade while cooking to infuse more flavor.
      6. To serve, top portobello steaks with avocado chimichurri. This dish tastes well with mashed potatoes, grilled asparagus, rice or quinoa or a dressed up salad.
      7. Enjoy with friends and family!
