Serving Size: 4 servings
1 can chickpeas
1 can peeled plum tomatoes
1 zucchini chopped
1 carrots chopped
1 pepper (red, green, yellow, orange) chopped
1 cup of red or white onions chopped
3 cloves of garlic (or to taste)
1 tablespoon of fresh ginger (or to taste)
1 teaspoon of curry (or to taste)
1 teaspoon of cumin (or to taste)
1 teaspoon of tumeric (or to taste)
2 tablespoon of tomato paste
Salt and pepper to taste
2. Add chopped garlic, ginger, peppers and onion and cook until translucent.
3. Add chickpeas, peeled plum tomatoes, zucchini and carrots and bring to simmer.
4. Add tomato paste.
5. Add all the tasty seasonings and cook for another 5 minutes to soak it all in.
*Add vegetable stock if you want more of a soupy stew*
Serve and enjoy with family and friends...or dogs : )
