Today I was feeling for something crispy but nutritious so I experimented with tofu... I breaded it, air fried it and then threw it over a salad. If you don't have an air fryer, the oven or stove will do just fine! Check out the recipe below!
Prep Time: 10 minutes
Cooke Time: 10 minutes
Serving Size: 4 servings
1 block of firm tofu
1 cup of panko bread crumbs
1. Cut the block of tofu into desired size cube shapes.
2. Bread tofu in panko crumbs, add seasoning to taste (savory or spicy).
3. Place breaded tofu in air fryer for 10 minutes.
4. While that deliciousness is heating up, prepare your salad, rice or quinoa. I put the tofu over a bed of mixed greens with shredded carrots, red onion, scallions, radish, tomato, red and yellow peppers.
